These Blueberry Banana Bars are any banana lover’s dream! They’re soft banana bars that come together in one bowl and have sweet juicy blueberries mixed in. Perfect for breakfast or a snack!

All-purpose flour – This flour is used for the muffins and cannot be substituted for any other.
Bananas – 3 large very ripe bananas are used. If using frozen bananas, thaw and drain any excess liquid before adding into the bowl.
Blueberries - I used fresh blueberries.
Brown sugar – I used dark brown sugar, but light brown sugar works as well!
Eggs – Must be at room temperature before starting your bake.
Oil – I used a flavourless oil. You can use any type of oil, but flavoured ones will slightly change the taste. You can also use melted and cooled butter instead.

Step by step instructions
Here is how to make and bake these banana blueberry bars. You will need a 9×9 square pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.
Step 1 – Prep. Grease the pan. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside.
Step 2 – Whisk wet ingredients. In a large bowl, whisk oil, brown sugar, bananas, vanilla, and eggs.


Step 3 – Add in dry ingredients. Toss in flour, cinnamon, baking powder, baking soda, and salt. Mix until no dry streaks appear. This will be a runny batter.


Step 4 – Add blueberries. Gently toss the blueberries in 1-2 tsps of flour before adding them into the mixing bowl. This will help absorb any liquid they may have from washing. Then add into the bowl and mix in a few times.


Step 5 – Transfer. Place the batter into the prepared pan and spread evenly.


Step 6 – Bake. Bake the bars for 25-35 minutes or until a toothpick inserted comes out clean. Allow to cool, slice, and enjoy!

Expert Baking Tips
Here are a few expert baking tips from my kitchen to yours
- Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
- Use super ripe bananas. The more black spots they have, the better. This means they are sweeter.
- Don’t use to much blueberries. I used about 1/2 cup total.
FAQ
Can I bake this in an 8×8 pan?
Yes, the bars will be thicker though.
Do I have to add blueberries?
No!
Can I bake this in a 9×5 pan?
Yes. Just note that the bake time will be longer and keep an eye on it after 20 minutes of baking.

Banana Blueberry Breakfast Bars
Ingredients
- 1 cup mashed bananas approx 3 medium bananas
- 1/2 cup oil
- 1 tbsp vanilla
- 2 eggs room temperature
- 3/4 cups dark brown sugar or light brown sugar
- 2 cups flour
- 1 1/2 tsps baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon optional
- 1/2 tsp salt
- 1 1/2 cups fresh blueberries washed and dried
Instructions
- Grease the pan. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside. Preheat oven to 350°F. Mash the bananas and set aside as you prep the rest of your ingredients.
- In a large bowl, add oil, vanilla, mashed bananas, brown sugar, and eggs.1 cup mashed bananas, 1/2 cup oil, 1 tbsp vanilla, 2 eggs, 3/4 cups dark brown sugar
- Add in the flour, baking powder, baking soda, cinnamon, and salt. Using a rubber spatula, gently fold it in until a soft batter forms. It will be runny.2 cups flour, 1 1/2 tsps baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, 1/2 tsp salt
- Gently toss the blueberries in 1-2 tsps of flour before adding them into the mixing bowl. This will help absorb any liquid they may have from washing. Then add into the bowl and mix in a few times.1 1/2 cups fresh blueberries
- Transfer into the prepared pan and spread evenly.
- Bake for 25-35 minutes. It really depends on your oven, but after 25 minutes I would start checking with a toothpick to see if it’s ready! A toothpick should come out clean.
- Allow to cool, slice, and enjoy! This banana blueberry cake is soo good! It stays good on the counter for a day in an airtight container, and in the refrigerator for 5 days!
