These soft Apple Oatmeal Cookies are loaded with tiny chunks of sweet apples and full of warm spices. They are topped with a simple sweet glaze and are the best cookie for fall.

I was blown away with how good these cookies are, and so was my family! They couldn't wait for me to photograph them so that they could dig right in.
The oatmeal cookie dough comes together in a few simple steps with no mixer required. It has nutty, brown butter, which adds a lot of gourmet flavour. Then, sweet chunks of apple get mixed in.
The cookies are scooped and baked to perfection. The edges are perfectly crisp, and the middles are super soft. Every bite is full of caramelized brown butter flavours, sweet apples, and hints of cinnamon spice.

Step by step instructions
Here is how to make and bake these Apple Oatmeal Cookies. You will need two trays lined with parchment paper, a large mixing bowl, a spatula, a whisk, and a standard 2 tbsp ice cream scoop.
Step 1 - Mix dry ingredients. In a medium bowl, add in flour, rolled oats, baking soda, baking powder, cornstarch, cinnamon, cloves, and salt. Stir together and set aside.
Step 2 - Whisk butter and sugars. In a large bowl, add the brown butter, brown sugar, and white sugar. Whisk to combine for 1-2 minutes.
Step 3 - Add in eggs and vanilla. Whisk in the eggs and vanilla for another 1-2 minutes until well combined.


Step 4 - Mix in dry ingredients. Add in the dry ingredients and mix until a soft cookie dough forms.
Step 5 - Add apples. Mix in the chopped apple chunks and mix a few times.


Step 6 - Scoop and bake. Scoop 6 cookies per tray. Bake for 13-15 minutes or until the edges are a golden brown colour.
Allow the cookies to completely cool, then glaze and enjoy!

FAQ
How do I store these cookies?
These cookies are best served fresh. When not consuming, keep them in an airtight container on the counter for 3 days, or in the refrigerator for up to 1 week.
Do I have to peel the apples?
No, you don't have to, but it's easier to chop them into small and even pieces when the apple is peeled.
What kind of apples should I use?
Any kind works! I prefer a tart apple like Granny Smith, as I find it compliments the cookie dough well, but any sweet or sour apple will be delicious.
Can I freeze baked cookies?
Yes. Once baked, allow to cool completely and don't glaze them. Then place them into a Ziplock freezer-safe bag with parchment paper in between to avoid sticking. They stay good frozen for up to 2 months.
When ready to eat, allow them to thaw at room temperature or warm them in the oven at 300°F for 5-7 minutes (My personal favourite).
Do I have to brown the butter?
No, but I highly recommend it! Browning butter adds a ton of gourmet flavour into the cookies. If you don't brown the butter, only add 1 cup of butter (227g).

For the cookies
- 2 cups all-purpose flour
- 2 cups rolled oats
- 1/2 cup dark brown sugar
- 1/2 cup white sugar
- 1 cup + 1 tbsp unsalted butter melted, browned, and cooled
- 1 tsp baking soda
- 1/2 tsp baking powder
- 2 large eggs room temperature
- 1 tbsp vanilla
- 2 tsp cornstarch
- 1/2 tsp salt
- 1 tsp cinnamon
- pinch of cloves
- 1 1/2 cups apples peeled and chopped in small cubes, about 2 medium-sized apples
For the glaze
- 1 cup icing sugar
- 2-3 tsp milk
- Dash of cinnamon
Instructions
- Preheat the oven to 350℉/176℃. Line two baking trays with parchment paper and set aside. Peel and chop the apples into small cubes and set aside.1 1/2 cups apples
- Brown the butter. Melt the butter in a medium sized pan over medium heat. Once it melts, it will crackle, then become foamy – continue mixing the butter while this happens to prevent burning. The butter will go from melted to golden brown quickly, and you’ll know it’s almost done when the aroma of browned butter arrives. The whole process should take about 5 minutes! Once golden, remove from heat and transfer to a glass bowl. Let the butter cool for 15-30 minutes while you prep on the rest of the recipe.1 cup + 1 tbsp unsalted butter

- In another large bowl, add the brown butter (it can be warm, but not hot), white sugar, and brown sugar. Whisk to combine (1-2 minutes).1/2 cup dark brown sugar, 1/2 cup white sugar, 1 cup + 1 tbsp unsalted butter
- Whisk in the eggs and vanilla for another minute or so until well combined, scraping the sides of the bowl as needed.1 tbsp vanilla, 2 large eggs
- Add the dry ingredients in, and with a spatula gently fold until a soft cookie dough forms. Do not over-mix!
- Mix in the chopped apples a few times to evenly distribute them in the cookie dough.1 1/2 cups apples
- Scoop and bake 6 cookies at a time. I used a 2 tbsp cookie scooper. The cookies will bake for 13-15 minutes and are ready when the edges are a golden brown color.
- To make the glaze, combine powdered sugar, cinnamon, and milk until desired consistency is made. Drizzle, allow to set, and enjoy!1 cup icing sugar, 2-3 tsp milk, Dash of cinnamon
