Step by step instructions
Here is how to make and bake these Apple Cinnamon Oatmeal Cups. You will need a well greased 12 muffin tin, 3 mixing bowls, a spatula, and a whisk. Chop the apples into tiny cubes (see photo at step 4 for reference).
Step 1: Mix dry ingredients. In a bowl, add the flour, baking soda, baking powder, rolled oats, cinnamon, cloves, and salt. Stir to combine and set aside.
Step 2: Whisk wet ingredients. In a large bowl, add the brown sugar, milk, unsweetened applesauce, eggs, and vanilla. Whisk together until well combined, about 1-2 minutes.
Step 3 - Combine. Add the dry and wet ingredients together. With a spatula, gently stir until a liquidy batter forms.
Step 4 - Add apples. Mix in the chopped apples a few times until evenly distributed - do not over-mix.
Step 5 - Scoop. Evenly divide the batter in the muffin tin, filling it all the way to the top. This batter is liquid-y, so make sure you scoop equal parts of the oats/apples and the liquid to ensure proper baking. Sprinkle cinnamon sugar on top (optional).
Step 6 - Bake. The oatmeal cups bake for 30-40 minutes or until a toothpick inserted in one in the middle comes out clean. Allow to cool, then gently run a knife around the edges and pop each cup out and enjoy!
FAQ
How do I store these cups?
Oatmeal cups are best enjoyed day of or next day. Store them in an airtight container on the counter for up to 5 days, or in the refrigerator for up to 1 week. They are a great meal prep snack!
Is this oatmeal or a muffin?
It's a bit of both! These oatmeal cups are more solid than oatmeal, but not fluffy like a muffin. If you're in the mood for a muffin, try Apple Oatmeal Muffins.
Do I need to peel the apples before?
No. You can leave the skin on like I did, or peel it if you don't like the texture of them.
What apples work best?
I used sweet apples, but tart ones would add a nice contract.
Can I use quick oats?
No, you must use rolled oats or large flake oats. Quick oats are to small and won't absorb the liquids the same.
