Ingredients Notes
Here are the six ingredients needed in these bars. Full recipe with a recipe card and measurements are down below.
- Butter: I always use unsalted for baking. This will be cold.
- Baking powder: Allows the base to rise a little.
- Flour: All-purpose flour is used.
- Sugar: Granulated white sugar is used.
- Strawberries: Fresh bright red strawberries are sliced into pieces.
- Cornstarch: Helps absorb the juices from the sliced strawberries.
Step by step instructions
Here is how to make and bake these easy strawberry bars. You will need a 9×9 baking pan lined with parchment paper, 3 mixing bowls, and a spatula.
Step 1 – Prep. For easy removal of the bars, line the bottom and two sides with parchment paper. Gently grease the other two sides and then set aside.
Step 2 - Make the crumb. In a large bowl, add cold butter, flour, white sugar, and baking powder. Mix together using a fork or your hands, until big and small crumbs form (see photo below for reference). Set aside about 1 1/2 cups of the crumb for the topping.
Step 3 - Bake the base. Transfer the remaining crumb into the prepared pan and firmly press it down and up slightly along the sides. Bake for 15 minutes. With the remaining topping, add it into a bowl and press it with your fingers to form larger and smaller streusel pieces. See image for reference. Place in the fridge to chill.
Step 4 - Make the strawberry filling. Chop the strawberries into small pieces. Add cornstarch and white sugar and mix together.
Step 5 - Assemble. Once the base has been baked, remove from the oven and sprinkle the strawberry filling on top evenly, leaving about 1 cm of a border from the edges. Then sprinkle the remaining crumb on top.
Step 6 - Bake. Place the bars back into the oven and bake for 35-45 minutes. Mine took 42 minutes exactly. The bars are ready when the top is a light brown.
Step 7 - Cool. Allow the bars to cool completely before slicing. If you slice them warm, they will fall apart. Personally, I love eating them warm with a scoop of vanilla bean ice cream!

How do I store these bars?
These strawberry bars are best served within the first two days. Any remainders can go in the fridge for up to 5 days in an airtight container.
Can I use other fruit?
Yes, feel free to use raspberries, blueberries, or rhubarb. I made a similar Easy Strawberry Rhubarb Bars version of this a few weeks ago.
Can I add more sugar?
Yes. The sweetness of your strawberries matter. If they aren't sweet, the bars won't be either. You can add up to 1/3 cup more of white sugar if you wish.

Ingredients
For the base/topping
- 3 cups all-purpose flour
- 1 cup butter cold
- 1/3 cup white sugar
- 1/2 tsp baking powder
For the strawberries
- 3 cups fresh strawberries* sliced
- 2 tbsp white sugar
- 3 tbsp cornstarch
Instructions
- Preheat the oven to 375℉/190℃. Line a pan with parchment paper and set aside.
- In a large bowl, add cold butter, white sugar, baking powder, and flour. Mix together until a crumb forms. The consistency will be sand-like. Set aside 1 1/2 cups for the topping.3 cups all-purpose flour, 1 cup butter, 1/3 cup white sugar, 1/2 tsp baking powder
- With the remaining crumb, transfer it into the prepared pan. Press down firmly and evenly along the bottom and sides of the pan. Make sure it is evenly pressed down.
- Bake this base for 15 minutes.
- Take the remaining 1 1/2 cups of crumb and with your hands, press it to form larger and smaller streusel pieces. Place in the fridge to chill.
- Slice the strawberries into pieces. Then add the white sugar and cornstarch and stir together.3 cups fresh strawberries*, 2 tbsp white sugar, 3 tbsp cornstarch
- Once the base has been baked, sprinkle the strawberries on top, making sure the strawberries don't touch the edges of the pan. Then sprinkle the crumb on top evenly.
- Place back into the oven and bake for another 45-55 minutes. The bars are ready when the edges have turned a golden brown and the top is beginning to brown.
- Allow the bars to cool completely before slicing if you want proper slices. If you want to serve it warm, it will be messy but so delicious. I prefer them warm with a scoop of vanilla bean ice cream!
