Strawberry Cake

Indulge in this sweet and summery Strawberry Cake! It is a moist vanilla cake with sweet strawberries throughout. This cake is bursting in strawberry flavour in every bite!

For the glaze

  • 2 1/4 cups icing sugar
  • 1 tbsp lemon juice or orange juice, water, or milk
  • 1-3 tbsp fresh strawberries smashed

Instructions
 

  • Preheat the oven to 350℉/176℃. Line a 9x9 baking pan with parchment paper and set aside. Slice the strawberries and set aside.

  • In a medium-sized bowl, add the flour, baking soda, baking powder, salt, cornstarch, and cinnamon. Stir to combine and set aside.

  • In a large bowl, add the eggs, vanilla, oil, yogurt, and sugar. Whisk for 2-3 minutes until well combined.

  • Add the dry and wet ingredients together. With a spatula, gently fold until a soft cake batter forms. Don't over-mix!
  • In the bowl with the sliced strawberries, lightly sprinkle 1 tbsp of flour on top and mix around to evenly coat the strawberries in the flour. Then add them into the bowl with the cake batter and stir to evenly combine and distribute. Don't over-mix!
  • Transfer into the prepared pan and spread evenly.
  • Bake the cake for 45-55 minutes or until a toothpick inserted comes out clean.
  • As the cake cools, make the glaze. In a bowl mash the fresh strawberries into small pieces/chunks (don't drain the juice). Add the powdered sugar and lemon juice in and stir until a glaze forms.

  • Once the cake has cooled, drizzle, allow to set, and enjoy!

Notes

*Smashed strawberries - Depending on how much strawberry flavour you want. Start with 1 tbsp, then mix in more until your desired consistency is formed.
