Instructions
Preheat the oven to 350℉/176℃. Grease an 8-by-8-inch baking pan. Line the pan with parchment paper.
In a medium-sized bowl, add in flour, baking soda, and cornstarch. Mix together and set aside.
1 1/2 cups all-purpose flour,
1/2 tsp baking soda,
1 tsp cornstarch
In a large bowl, add the melted and slightly cooled butter, light brown sugar, and dark brown sugar. Whisk together until smooth.
1/2 cup unsalted butter,
1/2 cups light brown sugar*,
1/2 cup dark brown sugar
Add in the eggs and vanilla. Whisk until smooth and air bubbles form, about 1-2 minutes. Then whisk in the peanut butter.
2 eggs,
1 tsp vanilla,
3/4 cups creamy peanut butter
Add the dry with the wet. Using a spatula, mix until a soft dough forms. Don't over-mix! Once there are no flour streaks, stop.
Mix in the semi-sweet chocolate chips until just combined.
3/4 cups semi-sweet chocolate chips
Spread the dough evenly into the prepared pan. Sprinkle extra chocolate chips on top (optional, but recommended).
Bake the bars for 28-35 minutes or until a toothpick inserted comes out with a few crumbs and not batter.
Notes
Brown sugar -
You can use 1 cup of light OR dark brown sugar, I just decided to use half light and half dark :) white sugar will not work.
