Peanut Butter Banana Oatmeal Bars

These are soft-baked peanut butter banana oatmeal bars! They are full of creamy peanut butter, hearty oats, and sweet ripened bananas. This recipe is perfect for meal-prep for the week and a delicious treat to bake.

Ingredients
 
 

For the bars

  • 1/4 cup oil or melted and cooled butter
  • 2 eggs room temperature
  • 1 cup bananas mashed, about 3 small or 2 large
  • 2/3 cups creamy peanut butter
  • 3/4 cups dark brown sugar
  • 3/4 cups milk room temperature
  • 2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp vanilla
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsps cinnamon
  • 1 tsp cornstarch

For the topping

  • 2 tbsp white sugar
  • 1/4 tsp cinnamon

Instructions
 

  • Preheat the oven to 350℉/180℃. For easy removal of the bars, gently grease the bottom and sides of the pan. Then place parchment paper in the pan across two of the sides, allowing some parchment paper to hang over the sides for easy removal. Set aside. Mash the bananas and then set aside and prep the rest of your ingredients.

  • In a large bowl, add flour, rolled oats, baking soda, baking powder, cornstarch, cinnamon, and salt. Mix until combined and set aside.

  • In another large bowl, whisk oil, brown sugar, and peanut butter. Whisk until well combined.

  • Add in eggs, vanilla, milk, and bananas. Whisk until well combined.

  • Add the dry into wet and mix until JUST combined. Don't over-mix!
  • Spread the batter into the prepared pan evenly. In a small cup, mix together sugar and cinnamon. Sprinkle that on top. This will give you a sweet crunchy top.

  • Bake the bars for 45-55 minutes, or until a toothpick inserted comes out dry. If it is wet, then the bars hasn’t fully baked yet so continue to bake at 5 minute intervals. Allow it to cool completely.
  • Allow to cool, slice, and enjoy! These peanut butter banana oatmeal bars are soo good! They stay good on the counter for a day in an airtight container, and in the refrigerator for 5 days!
