Classic chewy M&M Oatmeal Cookies require no chill time and come together in a few easy steps! They're full of hearty oats and chocolate M&M's in every single bite.
Preheat the oven to 350℉/176℃. Line two baking trays with parchment paper and set aside. Melt the butter and allow it to cool as you prep the rest of the ingredients.
In a bowl, add the flour, rolled oats, cinnamon, cornstarch, baking soda, baking powder, and salt. Stir to combine and set aside.
Into a large bowl, add the melted butter, brown sugar, and white sugar. Whisk to combine and set aside.
3/4 cups unsalted butter, 1/2 cup white sugar, 1/3 cup light brown sugar
Add in eggs and vanilla. Continue to whisk for 1-2 minutes until well combined.

Add the dry ingredients in and gently stir with a spatula until a soft cookie dough forms. Do not over-mix!
Add in the M&M's and stir a few times to combine.

Scoop 6 cookies per baking tray, spacing them apart from one another evenly. Add extra M&M's on top (optional).
Bake for 13-15 minutes or until the edges are a light golden brown and the middles are still slightly puffy. The cookies will continue to bake as they cool. Enjoy!
Notes
Butter - Make sure it is cooled down. If you use warm butter, it will melt the M&M colours into the dough.
