Easy Apple Oatmeal Cake

Apple Oatmeal Cake has fresh soft apples, cinnamon spice, applesauce, hearty oats, and incredible flavours in every bite. This cake melts-in-your-mouth and before you know it you'll be going for seconds!

Prep

  • Preheat the oven to 350℉/180℃. For easy removal of the cake, place parchment paper on the bottom and 2 sides of the pan. Gently grease the two sides without parchment paper and then set aside.
  • Peel and cut one of the apples into small cubes, and shred the other one. I like to do both as it brings more texture to the cake, but you can do one or the other with your 2 apples. Gently toss the apples in 1/4 tsp cinnamon and set aside to use later.

For the cake

  • In a medium sized bowl, add in flour, rolled oats, cornstarch, cinnamon, cloves, allspice, nutmeg, baking powder, baking soda, and salt. Stir to combine and set aside.
    1 1/2 cups all-purpose flour, 3/4 cups rolled oats, 3/4 tsp baking powder, 3/4 tsp baking soda, 1 1/2 tsp cornstarch, 1/4 tsp salt, 1 tsp cinnamon, Dash of allspice, Dash of cloves, Dash of nutmeg
  • In a large bowl, add oil, brown sugar, eggs, vanilla, and applesauce. Whisk for 2-3 minutes until it's well combined. Make sure to scrap the sides of the bowl.

  • Mix in the dry ingredients and using a spatula, gently fold until a batter forms. Do not over-mix!
  • Add the apples into the bowl. Gently mix until JUST combined, don't over-mix!

  • Spread the batter into the prepared pan evenly. In a small cup, add white sugar and cinnamon and mix together. Then sprinkle on top evenly. This will give you a sweet crunchy top.

  • Bake for 40-50 minutes, depending on your oven. It took me 48 minutes exactly. Allow it to cool, slice, and enjoy!
  • This cake is best enjoyed fresh day of and next day. Store in an airtight container for 3 days on your counter, or up to a week in the fridge.

Notes

*Apples – I used 2 large Granny Smith apples. You can use any kind of apples. I prefer using a tart apple in this cake as it compliments well with the sweetness. I had 2 cups total, with 1 cup being shredded and 1 cup sliced into small cubes. I chopped them with the skin off, but you can keep it if you wish. You can also JUST chop them or shred them, I prefer doing both for more texture :)
*Applesauce - You can use unsweetened or sweetened, but if you use sweetened the cake will be sweeter (obviously haha!)
