Easy Apple Oatmeal Cake

This is the easiest Apple Oatmeal Cake you'll ever make! It has apples, cinnamon, and oats in every bite. It's the perfect treat for any time of the day.

Prep

  • Preheat the oven to 350℉/180℃. Line the pan with parchment paper and set aside.
  • Peel the apples. Cut one of the apples into small cubes, and shred the other one. I like to do both as it brings more texture to the cake, but you can also just cut them or shred them both. Add 1/4 tsp on top and mix around to evenly coat them and set aside.

For the cake

  • In a medium sized bowl, add in the dry ingredients. Stir to combine and set aside.
    1 1/2 cups all-purpose flour, 3/4 cups rolled oats, 3/4 tsp baking powder, 3/4 tsp baking soda, 1 1/2 tsp cornstarch, 1/4 tsp salt, 1 tsp cinnamon, Dash of allspice, Dash of cloves, Dash of nutmeg
  • In a large bowl, add the wet ingredients. Whisk for 2-3 minutes until well combined. Make sure to scrap the sides of the bowl when needed.
    1/2 cup oil, 3/4 cups unsweetened applesauce*, 3/4 cups light brown sugar, 1 tbsp vanilla, 2 large eggs
  • Add the dry ingredients. With a spatula, gently fold until a batter forms. Do not over-mix!
  • Add the apples into the bowl. Gently mix until JUST combined, it's so important not to over-mix!

  • Spread the batter into the prepared pan. In a small cup, add white sugar and cinnamon and mix together. Then sprinkle on top evenly. This will give you a sweet crunchy top.

  • Bake for 40-50 minutes, depending on your oven. A toothpick inserted will come out clean when it is ready.

Notes

*Apples – I used 2 large Granny Smith apples. You can use any kind of apples. I prefer using a tart apple in this cake as it compliments well with the sweetness. I had 2 cups total, with 1 cup being shredded and 1 cup sliced into small cubes. I chopped them with the skin off, but you can keep it if you wish. You can also JUST chop them or shred them, I prefer doing both for more texture :)
*Applesauce - You can use unsweetened or sweetened, but if you use sweetened the cake will be sweeter (obviously haha!)
