Applesauce Chocolate Muffins

  • Preheat the oven to 425℉/218℃. Line a muffin tin with liners and set aside.
  • In a bowl, add the flour, cocoa, baking soda, baking powder, cornstarch, cinnamon, cloves, and salt. Stir to combine and set aside.
    2 cups all-purpose flour, 1/2 cup cocoa powder, 1 tsp baking soda, 2 tsp baking powder, 1/2 tsp cinnamon, pinch of cloves, 1 tbsp cornstarch, 1/4 tsp salt
  • In a large bowl, add the brown sugar, white sugar, and oil. Whisk to combine.

  • Add in eggs, vanilla, applesauce, and sour cream. Whisk to combine for another minute or so until smooth. Scrap the sides of the bowl as needed.
    1 cup unsweetened applesauce, 1/2 cup sour cream, 2 large eggs, 1 tbsp vanilla
  • Add the dry and wet ingredients together. With a spatula, gently mix just until a soft muffin batter forms. Do not over-mix!
  • Gently mix in the chocolate chips; do not over-mix! This is important.
    3/4 cups semi-sweet chocolate chips
  • Divide the batter evenly between the liners, they should be almost or all the way full. Sprinkle extra chocolate chips on top.
  • Bake at 425℉ for 5 minutes, then lower the temperature to 350℉ and continue baking for another 12-15 minutes or until a toothpick inserted comes out clean.
  • Allow to cool and enjoy! These muffins are so delicious!
