Line the loaf pan with parchment paper and set aside. Chop some pistachios and set aside.

Melt the chocolate until smooth. I used a double boiler method, but you can also use a microwave at 15 second intervals, stirring between each one. Add in the coconut oil and stir to combine. Remove from heat.
1 1/2 chocolate bars, 1 tsp coconut oil
Sprinkle the berries on the bottom of the pan evenly, until the entire bottom is covered as best as possible.
1 cup mixed berries*
Drizzle the chocolate on top as evenly as possible.
Sprinkle pistachios on top.
Place in the fridge to chill for 30 minutes or until hard. Slice into pieces and enjoy! This is such a delicious treat!
