Grease the pan. For easy removal of the blondies, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside. Preheat oven to 350°F.
Mash the bananas and add them to a large bowl. Then add in the peanut butter and mix together with a spatula well. It's okay if it's clumpy, that's from the bananas.
5 medium-sized ripe bananas, 3/4 cups creamy peanut butter
Add in the rolled oats. If you're adding in vanilla, add it in this step. Then mix in until the oats are evenly coated.
2 1/2 cups rolled oats, 1 tbsp vanilla
Toss in the chocolate chips and mix a few more times.
3/4 cups semi-sweet chocolate chips
Transfer into the prepared baking pan and spread evenly. Then add extra chocolate chips on top!
Bake for 20-25 minutes or until a toothpick inserted comes back clean. Mine took 25 minutes exactly.
Allow to cool. As it cools, it continues to set and bake from the warmth of the pan. Then slice, and enjoy!
