Pumpkin Coffee Cake is a soft coffee cake full of pumpkin and cinnamon sugar streusel. No electric mixer needed.

STEP 1: Whisk oil and brown sugar.

STEP 2: Add pumpkin, sour cream, eggs, and vanilla.

STEP 3: Add in flour, baking soda, baking powder, and salt.

STEP 4: Spread half the batter into a 9x9 pan.

STEP 5: Add cinnamon sugar filling and 1/4 cup streusel.

STEP 6: Layer again and add remaining streusel. Bake for 35-50 minutes.

This coffee cake is absolute delicious and simple to bake!
