Nutella Pumpkin Cookie Bars are chewy cookie bars stuffed with a gooey layer of Nutella! It comes together in one bowl with no electric mixer needed.

STEP 1: Whisk butter, brown sugar, white sugar, and pumpkin puree.

STEP 2: Whisk in egg yolk and vanilla.

STEP 3: Add in dry ingredients and fold until a soft dough forms.

STEP 4: Add 1/2 of the dough into the pan and dollop Nutella on top.

STEP 5: Add remaining cookie dough and press firmly on top.
