This Blackberry cake is so light and delicious! It makes for the perfect breakfast cake or post dinner sweet treat. It’s got juicy blackberries throughout and a crisp sugary crust on top.

STEP 1: Whisk eggs, sour cream, vanilla, butter, lemon juice, and lemon zest.

STEP 2: Whisk in white sugar.

STEP 3: Add in flour, baking soda, baking powder, salt, and cornstarch.

STEP 4: Add in blackberries.

STEP 5: Bake for 45-60 minutes.

STEP 6: Allow to cool, then remove from spring pan!
