Soft and fluffy Strawberry Rhubarb Muffins! They have sweet strawberries and tangy rhubarb exploding in every bite!

STEP 1: Whisk oil, lemon zest, buttermilk, sugar, eggs, and vanilla.

STEP 2: Add in flour, baking soda, baking powder, cornstarch, and salt.

STEP 3: Mix in strawberries and rhubarb.

STEP 4: Scoop into liners.

STEP 5: Add sugar on top and extra berries.

STEP 6: Bake at 375℉ for 20-25 minutes.
