Rhubarb Muffins

Rhubarb muffins! These are fluffy and soft muffins filled with rhubarb throughout and topped with a buttery sugar streusel!

STEP 1: Whisk together   butter, eggs, sugar, buttermilk, and vanilla.

STEP 2: Add in cornstarch, flour, baking soda, baking powder, and salt.

STEP 3: Mix in rhubarb.

STEP 4: Scoop into liners.

STEP 5: Sprinkle with streusel and bake for 20 minutes.

Allow to cool, and enjoy!
